It seems for new Buffalo restaurant/bars to survive, they have to fill a specialty niche.  Such as Just Vino, Tabree, Wine Thief, Campieri’s, Papaya and Chocolate Bar.   You have to be different and do a few things more superior than everybody else.  (I hear the foie gras at Tabree is among the best).  Merge is set to open on schedule in January.

Merge was already set to be different just by their menu alone.  Merge caters mainly to vegetarians but will have some fish and free-range chicken items.

That alone would allow Merge to fill a niche that has gone empty in the queen city.  That however, is just half the story.

Merge calls itself a place “Where Creative People Come Together”.  It is positioned to be exactly that!  The average person can come in and draw, paint or do some other creative work.  Our sources say that Merge will have live music and little special gatherings that will set it way apart from other restaurants and meeting places.

Merge is set to open in January and we’ll be among the first in line.
